To remove bitter/pungent taste.
- Boil in water for 15 minutes, change water 3 times.
- Soak the rind in 2% salt water overnight.
- Soak the rind in syrup; add sugar to the syrup every 3 hours.
- Boil in the last thick syrup for 3 minutes.
- Rinse in boiling water. Drain.
- The resulting candy is green.
