Christmas is the most celebrated season of the year. Filipinos start to spread the spirit of Christmas as early as September. And with Christmas, comes the favorite Christmas specialties. One of the favorite Christmas dishes in Philippine cuisine is Bibingka.
Bibingka is a rice cake similar to the Western pancake in appearance. In taste, texture and way of cooking, however, they are very much different from each other. It is considered a delicacy that has a unique preparation. It makes use of a “lansungan,” a heat steamer mounted on a pot of boiling water. It is kettle shaped with (ordinarily) two tubes that protrude and hold the “bumbong” or bamboo tubes filled with the needed ingredients and steamed through.
It takes only seconds for the puto bumbong to cook and the speed at which it is done is almost as fascinating as the taste. Almost.

The most popular symbol of Christmas in the Philippines is the parol. It represents the blessed star of Bethlehem. For Filipinos, not having a parol for decoration makes Christmas somewhat incomplete. The parol’s size depend on where it will be hung. A very large parol is usually used for high-rise buildings. For regular houses, parols are smaller.
