Tilapia production is increasing annually. It is now one of the major species produced in aquaculture in the Philippines, as well as in Region 2. Currently, tilapia is usually consumed as fresh and only small amount of the total supply is processied into different products. Employing appropriate processing technology and developing value-added products from tilapia is therefore necessary to increase economic returns from tilapia production.

Tilapia Longganisa

Ingredients:

  • 1 kilo tilapia
  • 8 tbsp brown sugar
  • 8 tbsp soy sauce
  • 1 tbsp black pepper
  • Pig casing
  • 1 tbsp salt

Procedure

  1. Clean the fish, remove internal organs, gills, scales, etc.
  2. Behead the fish
  3. Wash thoroughly
  4. Fillet the fish
  5. Pass into grinder and mix all ingrdients
  6. Stuff manually into casing, wash and drain.
  7. Pack using vacuum machine
  8. Keep frozen
