hi!leslie, you can buy Philippine Fermented Foods book by Priscilla Chinte-Sanchez also by the University of the Philippine Press and read Page 327 about vinegar. I have forty ( 200 L capacity ) drums being fermented using coconut water as basis. I will guide you how to make
coco water + sugar + yeast = alcohol
10% alcohol + vinegar starter= Vinegar ( 4.5 % )
