Tilapia Fish Kikiam
Raw Materials and Ingredients:
- 3/4 kilo tilapia meat
- 1 pc Egg, well beaten
- 1/2 cup chopped singkamas
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/2 cup flour
- 1-1/2 tsp Nguyong powder
- 1/2 tsp Pepper
- 1-1/2 tsp Salt
- Taupee wrapper
Sweet and Sour Sauce:
- 3/4 cup water
- 1 tsp Cornstarch
- 1 tsp Vinegar
- 2 tbsp Soy sauce
- 3/4 cup sugar
- MSG to taste
Equipments/Utensils:
- Measuring cup
- Measuring spoon
- Chopping board
- Knife
- Mixing bowl
- Fryer
- Colander
- Burner
Procedure:
- Separate fish meat from skin and bones. Wash fish meat.
- Grind or chop fish meat and shrimp. Add salt until tacky.
- Add all other ingredients and mix thoroughly.
- Wrap mixture in taupee wrapper. If aluminum foil or plastic is used, refrigerate for five minutes and remove from the wrapper.
- Fry in hot cooking oil.
- Serve with sweet and sour sauce.
Tilapia Embutido
Ingredients:
- 1 kg Tilapia meat
- 1 bulb garlic, chopped
- 1/4 kg Carrots, chopped
- 2 packs bread crumbs
- 1/4 kg Onion
- 1 tsp. Black pepper
- 5 pcs Red bell pepper, chopped
- 2 pcs Fresh eggs
- 1/4 kg Potatoes, chopped
- 3 pcs Hard-boiled eggs
- 4 tbsp White sugar
- 1 box Cheese
- 1 tsp Vetsin
- 1 box Raisin
- 1/2 tsp Curing salt
- 1/4 kg Hotdog
- 1 tsp Accord powder
- 2 tbsp Salt
- Aluminum foil
Procedure:
- Wash fish meat.
- Squeeze and chop meat.
- Mix salt to fish meat until tacky.
- Add other ingredients. Mix thoroughly.
- Wrap in aluminum foil.
- Steam for 45 minutes.
- Allow to cool and store in freezer.

meron po ba kayong ibang recipe nang kikiam na ang gamit ay laman ng baboy yata – iyon pong nabibili sa palengke. masarap po gumawa noon si malou rivera ng spices and food mix. thank you po ulit.

I eat almost any fish but am not so fond of tilapia (somehow, the muddy smell it has that’s ever present even when already cooked puts me off). but am fond of the regular embutido, and your recipe seems interesting i’d like to try it! can u please give me a tip to resolve the muddy smell? thanks!
Tilapia that are grown in ponds and feed with commercial pellet does not smell “muddy” – especially those grown in brackish water ponds. You might have bought Tilapia caught from shallow water lake or grown in fish pens thata re not feed well – such that they have eaten a lot of “soemthings” for quite a long time in the muddy water bottom.
it’s also called ngo hyong, and can be found in supermarkets. very fragrant!
buy the tilapia from batangas, not the one from laguna. how to tell the difference? batangas tilapia is dark, almost black, and is sold alive most of the time, while laguna de bay tilapia is whiter.
