FISH TOCINO

Ingredients:

Procedure:
- Fillet the fish. Cut the fillet with 4″ length. The cuttings could be used for burger.
- Mix the garlic, brown sugar, soy sauce and pepper together to dissolve.
- Pour the mixture over the tilapia fillet.
- Soak for 6 hours. Drain
- Sun or air-dry until dry to touch. Pack in polyethylene bag and seal.
- Keep refrigerated for longer storage.
FISH LONGGANISA

Ingredients:

Procedure:
- Cut the tilapia fillet into cubes and pass through the grinder.
- Mixed all ingredients and blend well.
- Stuff manually in a pig casing.
- Tie it with a cotton thread in equal distance of about 2 inches.
- Pack in polyethylene bag.
- Store in freezer for longer storage.
FISH BURGER

Ingredients:

Procedure:
- Chopped fish meat.
- Mixed all the ingredients to the chopped fish meat.
- Mold into round shape.
- Steam for 2-3 min.
- Pack in polyethylene bags and freeze
- Fry before consumption.
FISH ROLLS

Ingredients:
- 1 kg fish, lumpia wrapper
Marinating Solution:

Procedure:
- Fillet the fish. Cut the fillet with 4″ length. The cuttings could be used for burger, fish ball, and nuggets, longganisa and fish iumpia.
- Mix the marinating solution.
- Marinate sticks for 1 hour (marinating solution can be used twice).
- Drain.
- Wrap with lumpia wrapper.
- Pack in polyethylene bag. Keep refrigerated longer storage.
