Sea Cucumber Noodles

With its nutritional composition, the product is a potential substitute for commercial noodles which is served either as a meal or part of a meal.

Using the 9-point Hedonic Scale, organoleptic test showed that in terms of flavor, texture and firmness/dryness, the product is generally acceptable. It has a protein content of 24.98%, fat 3.24%, and moisture 12.03%

The product could last for 3 months.

Ingredients:

  • 9 tbsp water
  • 3 cup flour (1 cup for dusting)
  • 1 egg yolk
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp powdered sea cucumber (or 1 cup ground)

Procedure

Mix sifted flour, salt, sea cucumber, and baking powder. Add egg yolk and mix thoroughly. While mixing, gradually add water. Divide/cut the mixture into four. Knead each portion and cut using a noodle machine. Blanch the noodle in boiling water with vegetable oil. Rinse the noodle in cold running water and add a few drops of vegetable oil.

Drain the noodles and dry thoroughly under the sun for two days or in a cabinet dryer for 1 day.

Pickled Sea Cucumber

The pickled product is a good choice for health conscious people. The quality attribute and general acceptability of the product is comparable to commercial pickled products.

Pickled sea cucumber contains 6.63% protein, 2.01% fat, and 70.9% moisture. It could last for 10 months when kept at room temperature. For prolonged storage life, keep the product in refrigerated temperature.

Ingredients:

  • 3/4 cup white sugar
  • 1/2 cup vinegar
  • 14 tbsp salt
  • 1 pc small carrot
  • 1 pc small ginger, chopped
  • 150 g sea cucumber for 1-8 oz bottle
  • 1/4 tbsp MSG (vetsin)
  • 5 pcs cloves
  • 4 pcs bay leaf
  • 2 pcs small onion, sliced
  • 3 pcs peppercorn

Procedure

Wash sea cucumber in 5% brine solution and drain thoroughly. Prepare the pickling solution by dissolving the sugar in vinegar and season with salt, MSG, and peppercorn. Simmer until thick.

Pack the sea cucumber in sterilized bottle. Arrange the onions, carrots and bay leaf inside the bottle. Pour the pickling solution into the bottle while still hot. Seal the bottles immediately.

    @oliver, a mortar and pestle will do for a small scale production, or you can look for grinding machine for large scale production.

    Good morning…got curious po,nagcuculture ako ng sea cucumber.Meron akong stocks n dried sea cucumber…Pano po yung sinasabi nyong Powdered sea cucumber and Ground sea cucumber,pano po maaatain yun using dried sea cucumber?Thanks and more power..
