Instead of campden tablets you can use sodium metabisulfite which is the component of campden tablet. This is currently available at any laboratory chemical suppliers. But the use of sodium metabisulfite is regulated due to its health hazards, merely inhalation if fatal. Use sodium metabisulfite at concentration of 0.01 percent. Ordinary wine yeast can be used for wine making but not recommended. It is advisable to buy wine yeast strains at University of the Philippines or at any existing winery plant.
