Hi,
Has anyone tried making siopao with rice-flour (ketan) in stead of wheat flour? I'm allergic to wheat, so I'd like to try this recipe if from riceflour.
thanks.

I didn't use the recipes but I can give you the equivalent of 1 packet of active dry yeast is 2and 1/4 teaspoons. I use the Red Star Yeast Brand. This is my first time to open this website and sounds interesting. Hope this will help you.

I made the dough recipe from the old Chinese cook book. The finished product seemed sort of doughy.I experimented ,and cooked them longer than the recommended 15 minutes. Did I prehaps, work the dough too much?It did take me awhile to form the dough balls. I don't have a reference point because the closest thing to siaopau I ever had was Manapau in Hawaii. Maybe nothing is wrong, and they are suppose to be a little doughy.I used beef that was marinated in Tocino, and they are very good.
