I. Meat materials
- 700 gm - Chicken’s lean meat, finely ground
- 300 gm - Pork back fat/chicken’s fat, ground
II. Extenders
- ¼ c - TVP, dry
- ½ c - Pineapple juice/water for hydration
- 10 t - Potato starch
- 1 t - Carageenan
III. Curing mix
- 2 t - Salt, refined
- 1 t - Phosphate [dissolve in ¼ c water]
IV. Seasonings
- 8 t - Sugar, refined
- 1 t - Phosphate [dissolve in ¼ c water]
- 1 ½ t - White pepper
- 3 t - Garlic, chopped
- ½ t - MSG
- 2 t - Sesame oil
- 1 t - Nutmeg
- 1 t - Meat enhancer
V. Breading
- 30-50% based on the total weight of finished product
VI. Procedure
- Chill meat and fat for 2 hours
- Mix ground meat and fat
- Add curing mix. Mix until tacky.
- Add extenders/fillers and mix.
- Add seasonings and mic again until well blended.
- Put in greased rectangular pan, flatten ½ inch thick.
- Chill meat mixture until firm for cutting.
- Cut into desired sizes or shapes.
- Roll in breading or in bread crumbs.
- Deep fat fry for 30 seconds or until golden brown at 180 deg.C [356 deg. F]
- Serve hot, or freeze if not needed.
VI. Yield: 50 pieces of 1” x 1 ½”

hi…question lang.
madali ba hanapin yun mga ingredients like TVP, Carageenan, phosphate,
nutmeg? available ba yan locally sa Manila.

@jack, the recipe above is primarily for commercial use hence the need for extenders. however, you can substitute other ingredients with your preference for your own consumption.

we’ve tired this recipe but sad to say that the result was frustrating kasi matabang yung taste nya. we thought that this recipe was kitchen tested. it did not passed to our panelist nong pina sensory test namin.

You can adjust the ingredients according to your preferred taste. I think there’s no such thing as a perfect recipe, it will always be subjective to any cook. We have different tastes and smell, so I guess it’s up to us to adjust and prepare it to our own preference. Btw, the recipe is from the Dept. of Agriculture website.
