Eels are long snake-like fishes with a smooth slimy scaleless skin. There are thousands of this kind in the sea and hundreds in freshwater. Monopterus albus (ricefield eel), which became instinct for unknown reasons was introduced by the International Institute of Rural Reconstruction (IIRR) in the late 80′s. I am interested in “glass eels” frozen, for human consumption.
They are small baby eels, and our request is for food purposes and not for grow, that why we consider frozen state for the transport.
As you know, there are many different types of eels, ( ANGUILLA)
Our specifications are:
1) We need the glass eel not to be bigger than 3,5 mm in diameter and 10 cm large.
2)The smallest should be bigger than 2,5 mm in diameter and 8 cm large
3)To find out if the “glass eels” you have comply with the Spanish taste you must check if the colour after boiled is white with only the back of the glass eel dark or black.
Just boil a few for just 20/30 seconds and see if the colour is as needed, and the length is around 8 to 10 cm, with a diameter of 3/3,5 millimetres. (They shrink when boiled.)
After boiled they must be white with a dark strip in their back, if they are dark they are of no interest for us.
We don’t want you to send them boiled, this is just to check their colour.
As the transport when shipping quantities has to be done in frozen state we want them block frozen in their own slime, and packed in Styrofoam boxes
Once you have found a type of ” glass eels ” according with our specifications, in sufficient quantities and that you can export them, you have to send us a frozen sample of about 1 kg by airplane.
We will make you a transfer to cover the cost.
The official documents that we need are:
1.. Sanitary certificate in EU model
2.. Origin certificate
3.. Invoices
Please confirm the Latin name of the Anguilla you can supply.
Once received the sample and if the quality is correct you have to give us a price proposal delivered in Madrid Spain, for regular shipments (more that 100 kilos each shipment)
