Sorbetes, popularly known as “dirty ice-cream”, is already part of our culture. Old books and literature depicts this two-wheeled colorful ice cream cart pushed by old fellow. His ringing hand bell is music to the ears of most children. Sorbetes has been a big part of my childhood years. This is one of my rewards after pulling grandma’s gray hair. A loose change for running errands for my relative can afford me to buy 2 scoops of ice-cream on top of sweet crunchy “apa”.

Here’s the recipe that will cost you a few hundred pesos to produce a decent home-made ice-cream. Add a few thousand pesos more to produce the quantity for commercial consumption.

Ingredients:

  • 1/2 gallon powdered milk
  • 1-1/2 gallon coconut milk
  • 1/3 gallon evaporated milk
  • 2 kilo sugar
  • 1/3 kilo corn starch

Procedures:

  1. Mix all ingredients using mixer (or egg beater) until the consistency is foamy.
  2. Pour in a stainless steel pan or boiler. Let boil for 15 minutes to kill any microbes or bacteria. Set aside to cool.
  3. Put desired flavoring (artificial flavors): vanilla, lemon or kalamansi (can be obtain from peels), chocolate, coffee, nuts, cashew and others. You can also use real fruit flavors like mango, ube, macapuno, cheese, etc.
  4. Put into freezer for half an hour or until half-frozen.
  5. Remove from freezer and mix again (with big wooden spon or egg beater) until the consistency becomes a thick mass.
  6. Transfer it in round stainless container. Cover, put it in wooden push cart. Put lots of crushed ice and salt between the container. You can use dry ice as an alternative.
  7. The ice-cream will get hard in 20 minutes.

Apa (ice-cream cones) : You can buy them from grocery stores in different sizes.

Potential market are schools, parks, birthday and baptismal of friends, relatives and neighbors, public market, and any other place where the foot traffic is high. You can even make home deliveries.

    @rhona, yes, you can use coconut powder, just make sure that the ratio is equal to the liquid coconut. you can always experiment according to your taste preference.

    ano po ang pagkakaiba nung procedure na niluluto muna ang cassava strach bago i-mix ang raw coco milk, skimmed milk at white sugar?

    mas madali bang pabulain ang ingridients na ito kaysa dun sa binanggit kong procedure?

    any suggestion of proven formulation to prevent raising blood sugar sa katakawang kumain ng dirty ice cream?

    Hi Sultan and Oliver,

    I think it’s safe to adjust the measurement of ingredients relative to the ratio of the original recipe. For example, the total ingredients of 0.5 gallon powdered milk + 1.5 gallon coconut milk + 0.33 gallon evap milk is 2.33 gallons. That means the ratio is 22%, 64%, 14% respectively. For sugar 2 kilo + cornstarch 0.33 kilo. Ratio is 86% and 14% respectively. But you can always adjust some ingredients according to your taste. It’s always better to taste-test the finished products to your friends and relatives to get an honest opinion.

    I’m not an ice-cream maker expert, just my suggestions.

    hello po, My mom wants to make dirty ice-cream so she can sell it in her sari-sari store. tanong ko la po sana kung ung powdered milk ay solid.Eto lang po kasi ung nakita kong recipe over the internet. Gallon is a measure of volume of liquid, right? So pano po un? Dapat liquid ung powdered milk or should i measure the volume in powder form? Nalalabuan lang po.

    I believe the gallon of powdered milk is intended to mask the coconut milk or gata which could overwhelm the ice cream flavor. Although the “gata” would certainly make a nice texture to the palate, and of course, extend the quantity of ice cream.

    powdered milk nga eh! paano naging liquid at solid? kung liquid, edi sinabi na ng author kung ano yun, condensed, evap, or fresh… labo labo mo talaga… powdered milk is powdered milk. how come you would ask such question. sorry for my temper.
